Whole berries fermented in Italian botte (1000L) then the lids closed and left on skins for 6 months, pressed off with the wine returning to the botte for another few months. The wine is then racked off its lees and matured in 2000L casks for a year. This is fabulous. Savoury, tangy, refreshing and thoughtful. Dark cherries, spicy, with some woodsy influence, but it's the tannins that are spot-on, Italianate in shape and texture, finishing with fine acidity. Jane Faulkner, Halliday Wine Companion
