Living in Brisbane with the extremes of weather we endure, it’s paramount to understand the importance of appropriate cellarage conditions when it comes to the successful ageing of wine. Thus, Sedimentary was born offering a purpose built, secure, temperature-controlled environment where collectors of fine wine can house their prized collections with ultimate peace of mind. Precisely catalogued for ease of inventory management, Sedimentary delivers on service and with combined wine retail, storage and logistics experience in excess of 60 years, we’re so much more than a wine storage facility.
We’re your "home away from home cellar".
As fellow wine lovers, we understand what wine appreciators need. We have developed a wine storage service model that will keep your wine in perfect conditions, get the wine to you when you want and yet keep the price of this service to a minimum. We are also able to assess your wines for drinkability or possible sale. One of the best things about keeping your wine in a Managed Cellar is that you can access an accurate list of your wines any-time any-where via our web portal. No more digging around in storage bins or your home cellar looking for a particular bottle and no more concerns about keeping your records up to date we do it all for you.
CELLAR CONDITIONS
The Sedimentary cellars are state-of-the-art, climate-controlled cellars that are specifically designed for the long-term storage of wine.
TEMPERATURE
Most experts agree the ideal temperature to cellar wine is between 14ºC and 18ºC. Temperatures much lower than this will excessively stunt maturation while those higher than this will prematurely age the wine. It’s also important to keep the ambient temperature relatively stable.
The Sedimentary cellars are kept within a 14ºC and 15ºC range. All-year round temperature control to maintain temperature fluctuations do not exceed 1°C.
HUMIDITY
The relative humidity of a cellar is best kept between 65 and 75%. Levels lower than this can cause the corks to dry out and shrink, allowing air into the bottle and causing oxidation. Environments with a humidity level much greater than 75% will cause labels to peel, cartons to rot and bottles to develop mould. This will affect not only the wine’s taste, but also its potential resale value.
The Sedimentary cellars are kept at a relative humidity level of 65-70%.
LIGHT AND VIBRATION
UV light can cause hydrogen sulphide compounds to develop in wine. Lighting in our cellars is kept to a minimum and all bottles are placed in cases on their side. Our cellars are also protected and insulated against vibration sources. Sedimentary cellars are setup strictly utilising UV-free LED lighting in wine housing areas to protect against UV damage.
SECURITY
Sedimentary cellars feature a range of security measures to keep your collection secure:
CCTV surveillance systems
Back-to-Base Security phone links
Movement, temperature, vibration and infrared detection
Security roller shutters
24 hours CCTV monitoring and security system
INTERNALLY MANAGED
Unlike some of our competitors, we do not outsource our warehousing to third party providers. Instead, all our client’s wine is held within our own secure climate-controlled facilities. We believe this is the only way that your wine can ever be truly safe, secure, and legally unencumbered by third-party warehouse liens.
INVENTORY MANAGEMENT
Each case of wine placed into the Sedimentary cellars are inspected, catalogued, and labelled with your own unique identification barcode. Your inventory is then uploaded into our online warehouse management system. As each bottle/case is added or removed from your collection, your records are automatically updated, so you’re always aware of the movements within your cellar.
If you are interested, the first step is to read the terms and conditions of your cellarage agreement, complete our application form and send it to sales@sedimentary.au. We will then be in contact to arrange for pick up or delivery.
I was tracking down a couple of vintage bottles of Amon Ra and stumbled across Sedimentary Wines in Brisbane, excellent selection of premium wines with a range of vintages. Amazing climate-controlled storage facility, to which you can even store you own wine! I meet the own and even got a tour of the facility, highly recommend for purchasing fine wines and storage if you so need.

I’ve purchased different wines from Sedimentary a couple of times. They’ve got a great selection and really knowledgeable. I’m currently working my way through the SC Pannell wines that I bought which I’ve not had in years and really enjoying. Looking forward to my next visit.

Loved this style.
Less citrus and more toast on the nose and brioche to taste.
